If the fish is to be cooked whole, it must first be scaled and gutted and the fins and gills must be removed. Rinse the fish before cooking and dry well inside and out with paper towels.

Fish can also be cut into fillets, steaks or cutlets, which can easily be done with a sharp knife.

Pin Bones

Pin bones

A pair of tweezers is useful to remove pin bones from sides of salmon. Needle-nosed pliers work, as well.

The 3 basic knives required for preparing fish are

  • a boning or fillet knife with a flexible or rigid blade
